advo-friendly egg muffins

I'm starting off a 4-day weekend today 
and decided to make a batch of these guys 
for a quick, easy breakfast option!

these egg muffins are great for three reasons:
they're clean
they're easy
they're quick

even better?
you can freeze them 
and just throw them in the microwave whenever you want some!
packed with protein and veggies, 
these are the epitome of an advo-friendly breakfast!


7 organic eggs
10 egg whites
veggies of your choice 
(i used onion, red peppers and spinach)
fresh ground black pepper

preheat your oven to 350
spray a muffin tin with olive oil or spread coconut oil in each cup
put some chopped veggies in each cup
mix your eggs, egg whites and pepper then pour in each cup (about 3/4 full)
bake 15-20 or until puffy and fully cooked
